Cranberry-Teriyaki Glaze
Ingredients
2 cups Organic or Pure Cranberry Just Juice
1 large red onion, sliced
1 tablespoon minced ginger
Inari Organic Dried Cranberries
Zest and juice of 1 orange
1 cup naturally brewed soy sauce
1 ½ teaspoon natural sweetener like NOW® Real Food Monk Fruit (or ½ cup white sugar)
1/4 cup canola oil (for cooking)
Sea salt and freshly ground black pepper
Directions
In a sauce pan lightly coated with oil, saut© the onions, ginger and dried cranberries until soft (about 5 minutes).
Add the orange zest and juice, soy sauce, Cranberry Just Juice, and natural sweetener/sugar and simmer until the volume reduces by half (about 10 minutes). Immediately, transfer to a blender and blend until relatively smooth, drizzling in remaining oil. Check for flavour and add salt and pepper and additional sweetener as required. Cool to room temperature, then transfer to a glass jar, seal and store in the fridge. Makes about 3 cups.
